I have challenged myself to be more healthy and less wasteful. I am going to journal my efforts to feed my kids healthy, waste free lunches and snacks. I will have some winners and some losers but I'm putting it all here...the good, the bad and even the ugly!

What a Crazy Week!!
I have been making lunches and I've even photographed one or two, but this has been one crazy hectic week! I am in the final push to try and get things all set for the first day of school next week! Wish me luck!

Day 439
Day 439 - DIY Lunchable. Super simple to finish out the week! D has turkey, colby/jack cheese, grape tomatoes, crackers, raspberries and banana Newton Thins. They are AMAZING! If you like banana bread you'll LOVE these cookies!!
I'm having a lunchable too!! I have turkey, buffalo hot wing cheddar, pea pods, hummus, raspberries and the banana Newton Thins.

Day 438
Day 438 - Chicken and sausage fried rice, Trader Joe's chicken gyoza, pea pods, a grape tomato, a bottle of Soy Vay, grapes and raspberries stuffed with chocolate chips.
I have Trader Joe's chicken gyoza, Chinese chicken sausage, pea pods, Soy Vay sauce and raspberries stuffed with chocolate chips.
UPDATE: I was asked for the fried rice recipe so I am putting it here.
2 cups cooked rice (cold)
1 cup mixed veggies (I use frozen then defrost in the microwave. Peas, carrots, stir fry veggies...whatever you have.)
1 small onion diced
1 cup diced cooked chicken (I also added 3 links of Chinese sausage)
1/4 cup Soy Vay very very teriyaki sauce (I have also used Trader Joe's Gyoza dipping sauce, sesame ginger dressing or any asian type sauce that tastes good to you)
Saute the onion and add the veggies. Cook until they are all crisp, tender. Add the rice and the meat and cook till they are warmed through stir in the sauce. Enjoy :)

Day 437 - Tuna/lettuce wrap, cucumbers, colby/jack cheese, grapes and Lemon Oreos.
I have a cream cheese/turkey/dried cherry wrap and a couple of grapes.

Day 436
Day 436 - Lots of leftovers equal a very yummy salad!! On a bed of mixed greens, D has cucumbers, grape tomatoes, rotisserie chicken and some leftover pasta salad. She also has grapes and an Oreo brownie.
I also have rotisserie chicken on mixed greens with cheese and kidney beans. Every Thursday my grocery store sells their rotisserie chickens for $5. It is the best bargain in the store! Not only do D and I get a few lunches out of one, I always use what's left to make chicken stock!

Day 435
The other day one of my fellow bento bloggers had mentioned that she had come across Cotton Candy flavored grapes on the internet. I checked out the website. I thought it was interesting but then just put it out of my mind. I shop at a small grocery store that very rarely has anything "new". It generally takes months for new products to reach the shelves there. Imagine my surprise today when I saw these in the produce section!! They were a bit pricey for my budget. I generally don't like to pay more than $1.99/lb for grapes. These were $3.99/lb. I bought them anyway because I wanted to try them!! My kids flipped! They smell like cotton candy when you open the bag. When you bite into one the first thing you taste is cotton candy. Then it sort of dissipates and just tastes like a regular grape, which I like. I think munching on a 1/2 cup of cotton candy would get to be a bit much! My kids loved them. I thought they were fun. I'd like to try the Grapery's other flavors but because of the price I probably wouldn't buy them frequently.
Day 435 - Today D has another mini lunchable. She really likes them. They are quick and easy to make. My grocery store carries Applegate farms lunch meat in their deli now. I have them cut it 1/4 inch thick then use my cutters to make the shapes. She has turkey, ham and american cheese (and one carrot heart) with some mini crackers. She also has some strawberry almonds under a Hello Kitty marshmallow and some Cotton Candy grapes.
I have some rolled up deli chicken, pea pods, Tribe "Everything" humus and Cotton Candy grapes.

Day 434
Day 434 - Linzer Star chicken sandwiches!! D's chicken sandwiches are cut with the Linzer cookie cutter. Her sandwich is chicken/mayo on wheat and white whole wheat. She has orange grape tomatoes and jack cheese cubes. There are also cucumber/carrot stars and black grapes.
I am still working on that rotisserie chicken! On a bed of mixed greens I have chicken, black beans, a pickled egg and some Hot Buffalo Wing cheddar, my usual crushed red pepper "dressing" and some grapes.

Day 433
Day 433 - DIY Lunchable "mini". D's lunchable has ham, turkey and cheese flowers decorated with carrots, she has mini flat bread crackers, black and white grapes. She also has 1/2 an Oreo brownie decorated with Wilton cookie icing.
I am working a double shift so I need lunch and dinner. My lunch is a turkey/cream cheese/dried cherry wrap, peapods and hummus with a few strawberries. My dinner is a lunchable. Chicken, ham scraps from D's lunch, cheddar cheese, crackers, white and black grapes.

Day 432 - Chicken BLT salad. Mixed greens topped with leftover rotisserie chicken, chopped tomatoes, and some chopped bacon. She also has strawberries and 1/2 of a chocolate/peanut butter cupcake.

Day 431
Day 431 - Lately I have been trying to make lunches as soon as I get home from work so I don't have to worry about it in the morning. It has been working well for me. Today I came home and put together a "Chicken & Waffle" lunch for D. She has some rotisserie chicken, mini waffles, chopped strawberries, tomato/mozzarella salad and some s/f butterscotch pudding. Then D was lucky enough to be invited on a little field trip tomorrow with a few of her friends!! I thought I should make her a lunch that wouldn't require utensils because they may end up eating in the car.
So here's D's lunch take 2!! She has deli sliced ham, mozzarella/cheddar string cheese, some crackers, grapes/strawberries, strawberry almonds and the Squooshi is filled with s/f butterscotch pudding.

Day 429
Day 429 - Odd post today...I'm only posting my lunch because D is having some homemade chicken and stars soup. She has been feeling under the weather for the last week so she has been requesting a lot of soup for dinner. So I didn't photograph the soup. My lunch is just random odds and ends that were in the fridge. Roasted chicken, buffalo chix dip, hummus, pea pods, Cabot Hot Buffalo Wing cheddar, grapes and strawberries.

Day 428
My parents went to Texas to attend my niece's wedding. They will be arriving home today. After a long travel day I like to have something in their fridge for them to eat so they don't need to worry about food prep. For today I left them chicken spring rolls, cucumber/tomato salad (from their own garden!), grapes and strawberries and some Soy Vay sauce to dip their rolls.
I have a salad of leftover roasted chicken, Cabot Hot Buffalo Wing cheddar cheese, kidney beans and cucumbers over a bed of lettuce. For my "dressing" today I used a little bit of a leftover dip I had made this weekend. I took about 1 cup greek yogurt, mixed it with about a tablespoon of blue cheese crumbles and about a 1/4 cup of Frank's Red Hot. I also added a couple of dashes of Tabasco Habanero sauce. I used it to dip soft pretzels over the weekend.

Day 427
Day 427 - Clean out the fridge salad. D's salad is mixed lettuce, deli sliced ham, cucumbers, tomatoes, carrot flower, and fresh mozzarella, she also has apple cinnamon Quakes and an apple.
My salad is mixed lettuce, leftover chicken, kidney beans, Cabot Buffalo Wing Cheddar, carrot and tomato flower. I also have a mini dipper of crushed peppers for my dressing. I have a few Quakes and some blueberry almonds.
