Day 334


Day 334 - D's lunch is packed in our new Go Green Lunchbox.  This is the first time I've used it.  I'm not sure I love it.  For starters it's enormous.  It doesn't fit into a standard size lunchbox.  That for me is the biggest "fail".  I don't really need a compartment for her water bottle..without that compartment it would fit perfectly.  One thing it does do right...each compartment has it's own individual seal.  That's pretty cool!  The lid is not dishwasher safe...that sucks.  The lid locks on nice and tight but isn't too hard for her to open...I like that!  Anyway, she has a ham/lettuce wrap, muenster cheese, orange bell peppers, cherry tomatoes, cookies and an apple.

**UPDATE** Well D came home from school today with her verdict.  She did not like the Go Green Lunchbox.  Since we didn't buy the lunch box carrier and the box it's self doesn't have a handle it was awkward for her to carry.

Day 333


Day 333 - I made this lunch for D yesterday.  She was sick and didn't end up going to school.  She will not make it to school today either.  She has some virus that is causing her to have a terrible migraine headache.  It is very sad to watch how much pain she is in.  When she is on the mend I'll be back to posting lunch.  This one is a turkey and lettuce wrap, bell pepper strips, cherry tomatoes, ranch dip made with homemade yogurt in the Mini Dipper, some apple chunks and chocolate covered sunflower seeds.  I packed this in one of her new Brights Easylunchboxes.  She loves the new brighter colors!

Day 332


Day 332 - Another DIY lunchable today.  She has smoked turkey and twist string cheese with orange cherry tomatoes, crackers, strawberry slices and chocolate covered sunflower seeds all packed into one of her new Brights Easylunchboxes!

Day 331


Day 331 - Today's lunch is a pb & blueberry jelly sandwich cut out with a Lunch Punch, red and orange tomatoes, a mini bell pepper stuffed with cream cheese and homemade blueberry yogurt.

1 C yogurt
1 packet truvia
a handful of frozen blueberries.

Day 330


Day 330 - Leftovers!!  D has leftover french toast from the weekend with sugar free syrup and some leftover ham.  She also has homemade chocolate yogurt with dark chocolate chips and sliced strawberries.

Day 328 and 329

Day 328 - DIY Lunchable.  It couldn't be more simple, no "fancy" cutters or anything.  I just cut a couple slices of deli ham into 6ths and quartered a couple slices of american cheese.  She also has some whole wheat crackers, cherry tomatoes, homemade yogurt and some sliced strawberries.


Day 329 - Pb & Honey puzzle sandwich, 1/2 a banana (not the most beautiful banana but a tasty one none the less!), homemade chocolate yogurt and strawberry slices.

For the chocolate yogurt I used 1 cup of my homemade yogurt and added 2 Tbs of unsweetened cocoa power and one packet of stevia.  I just mixed it all together.

Day 326 - Very boring lunch today but it's also a favorite!  There are 2 ham and turkey roll ups, strawberries, homemade yogurt and Kashi granola.

Day 325


Day 325 - We are finally starting to feel better from our lost week.  We were all so sick with cold/flu like symptoms.  So for today's lunch D has pizza "sliders".  I used a round cutter to cut the pizza then I put a slice of cherry tomato in the middle, topped with another round of pizza and then a black olive and a fresh mozzarella cheese pearl.  She has more cheese pearls, olives, a cherry tomato, a clementine and some cookies.

Day 324

Day 324 - Someone in my google+ Lunch Packing Community had posted a recipe the other day for BLT Pasta Salad.  It looked and sounded delicious!  I wish I could find the post so I could credit back to her.  I'll keep looking.  Anyway, the recipe called for bacon, mayonnaise and sour cream, that is a lot of fat jammed into a "salad"!  I used real bacon bits which are fairly lean and pack a ton of bacon flavor.  I replaced the mayo and sour cream with yogurt.  The recipe also called for cooking the tomatoes in bacon drippings.  I lightly sprayed a non stick pan with olive oil.  So all in all I think I lightened it up pretty good!  It was delicious!  D also has some orange jello with a couple of mini marshmallows and a clementine.

Day 323


Day 323 - I just could not get out of my own way this morning.  I was also completely lacking any creative ideas!  I just threw together this quick simple lunch.  It will at the very least hold her over till she gets home!  The top tier has some corn chips and salsa/cheese mixture in a mini dipper.  The bottom tier has a clementine and turkey/muenster cheese roll ups.


Day 322

Day 322 - Making use of some leftovers.  From the top L, D has some cookies, red and yellow grape tomatoes, roasted potatoes and some roasted chicken.  I have been asked before about sending leftovers like this and things that seem like they should be hot.  D is ok with eating her "hot" foods cool/room temp.  I packed this with an ice pack so it will be cold when she eats it.  She is ok with that.  I only use her thermos for things like soup, shepard's pie or hot pasta dishes.

Day 321


Day 321 - I so enjoyed my blogging break.  It was a very busy "vacation", trying to juggle the kids being home and working.  I am still trying to navigate this new phase of our lives.  There is a learning curve but I'm enjoying it!  So D's lunch today is a pb and honey sandwich, some red and yellow grape tomatoes and a very happy clementine.  D's sandwich is cut out with an icecream Lunchpunch and decorated with some honey and sprinkles.
