Day 90

Yesterday D and I made No Bake Granola Balls.  We used this recipe from the PBS website.  I had to make some adjustments to make it school safe since D is in a nut free classroom.  I used soy butter instead of peanut butter and I used homemade nut free granola.  Then just for fun we rolled them in unsweetened coconut.
I used a chocolate marshmallow to make the nose and ears and a white cake sprinkle with some blue frosting for eyes.
For lunch D and A have seafood salad in lettuce cups with cucumber and orange bell pepper.

Day 89

For snack D has some banana bread.  I used this recipe from King Arthur Flour.  I reduced the sugar some and replaced one egg with chia gel.

For lunch D and A have some shredded marinated, grilled pork, tortellini salad and grape tomatoes.
I just kind of tossed a little bit of everything into the pasta salad.  There is ham, salami, roasted red peppers, olives and peas in there with a little bit of light poppy seed dressing.

Yay I'm in!!

Sorry for the lack of posts.  I have not been able to get into Blogger for days!  Rather than bore you with my back log of nothing special, I'll start today off new.

Day 88

For snack D has homemade vanilla yogurt with bananas.

Once again lunch was corndog muffins.  They were such a hit yesterday the girls wanted them again today!

Day 87 & 88

Yesterday got away from me so I'm posting 2 days again.  The weather has been so dreary I find I can't get out of my own way!  I'm ready for some sun!


I started my day off yesterday feeling like I was running behind so all D had for snack was a banana!  For lunch I made mini spinach pies with cheese and nori eyes and some grape tomatoes.

For snack today D had Black rice pudding.
Lunch was corn dog muffins and fresh mozzarella cheese.

Days 85 & 86



D had seen some chocolate covered frozen bananas at the grocery store the other day.  It was a box of 6 (so really 3 bananas) for $5+.  She was begging for them but there was no way I was paying that!  So I promised her that we'd make them.  She had no school on Friday so it was the perfect time for us to do a little project together!
For lunch her and A have grilled ham and cheese sandwich and some peach slices.

Day 86
D has some random odds and ends...part of a 100 calorie pack of chocolate cookies, some s'mores gold fish and a few fruit snacks.

For lunch they had turkey, salami and cheese roll ups, a mozzarella and carrot fish, grape tomato balloon and some peach slices.

Day 83

When I had my "free" day on Monday I went to Whole Foods and really had some time to walk around and look at everything...no rush to get anywhere, no kids hanging off my elbow, it was beautiful.  While I was at WF I found some Chia Seeds.  I have been reading about them and their health benefits and had wanted to try them.  I had mixed them in with some oatmeal and that was good then I was searching for recipes and other uses for them.  I found a "chia pudding" recipe.  Basically you can mix it with any liquid to turn it into a pudding.  Last night I had made some chocolate chia pudding and also a chai tea chia pudding.  D LOVED the Chai one, so much so that she insisted on  having it for snack today.  On the one hand I am so proud that she would insist on such a healthy choice, on the other hand I worry that her choice may make her the target of ridicule by her peers.  The stuff is weird looking and not something that I would have thought to send to school with her, but the girl knows what she likes!
Chai Chia Pudding

1 TBS Chia seeds
9 TBS chai tea

Mix together, let sit for 15 minutes.  Mix again and let sit for another 15 minutes then it's ready to eat!

For lunch D and A are having beef soft tacos with cheese, salsa and lettuce, clementine and homemade applesauce.

Day 82

For snack today D had the second of the banana yogurt/coconut/ chocolate chip parfaits so I didn't take another pic.


With all of my spare time yesterday I made a pressed sandwich.  Ciabatta bread loaf, pesto, salami and sliced mozzarella.   So they all had some of the sandwich, some pesto pasta salad with sun dried tomatoes and artichokes and a couple of strawberries.

Day 81

Nothing special today, a clementine and string cheese.  Today is A's birthday so her mom and dad took the girls to lunch and over to Monkey Joe's for some play time!

Day 80

D had another parfait for snack today, and we didn't have A today so we were running errands and picked up lunch.  Today's parfait is banana yogurt, shredded unsweetened coconut and mini chocolate chips.

Day 79

D has been loving the yogurt parfaits lately.  I'm not sure if it's the parfaits or the container that she loves but whatever works!  Today's is homemade vanilla yogurt with sliced peaches and graham cracker crumbs on top.

M has some left overs for lunch today.  A couple nights ago we had beef stir fry with pasta and last night we had summer rolls.  The container in the middle is peanut dipping sauce for the rolls.

The littles had macaroni and meatballs with garlic toast crowns.  I used my lunch punch on the toast.

Day 78

For snack today D had another yogurt/strawberry parfait.  I was running late and didn't have time to take a picture.  For lunch both girls had Teddy Bear ham sandwiches, grapes, fresh mozzarella and black olive bear and Teddy Grahams.

Day 77

D and I made "cheesecake" strawberries yesterday, so for snack today she has 2 stuffed berries and some grapes.

Lunch is a chicken sandwich on Pepperidge Farms Goldfish bread.  I used cheese and nori to decorate the sandwich.  I made a fish out of fresh mozzarella, carrot and a black sesame seed.


When I made the filling for the strawberries I didn't really measure anything out so I'm just guessing at the amounts...but I'm sure the guesses are close enough.

1 (8 oz) package of cream cheese (I used low fat)
1/2 C greek yogurt
2 T Agave syrup
2 T confectioner's sugar
1 tsp vanilla
zest of 1/2 an orange
3 graham crackers (crumbled)
1 tsp unsweetened cocoa powder

Mix all ingredients (except cracker crumbs and cocoa powder) with a hand mixer until smooth.  Refrigerate while you prepare the strawberries.  I had very large strawberries so I cut the tops off and hollowed them out with a melon baller.  I put the filling to a ziplock bag and cut the corner off.  Squeeze the filling into the strawberries.  On a small plate combine cracker crumbs and cocoa powder.  Dip the filling end of the strawberries into the crumb mixture.

Day 76

Back to school!!  Today M has beef sliders, pickles and muenster cheese.  Her whole wheat slider rolls are packed seperately.
D's snack is a yogurt/strawberry parfait.  I used homemade yogurt sweetened with Torani sugar free vanilla syrup.

D and A are having "fushi" (faux sushi).  It is deli ham, plain greek yogurt, avacado, thinly sliced yellow carrot, thinly sliced cucumber and thinly sliced tomato.  Strawberries and orange slices.
