I have challenged myself to be more healthy and less wasteful. I am going to journal my efforts to feed my kids healthy, waste free lunches and snacks. I will have some winners and some losers but I'm putting it all here...the good, the bad and even the ugly!

Day 194
Day 194 - Pasta salad (zucchini/spinach pasta, corn, carrots, red bell pepper, pea shoots and the scraps of lunchmeat from yesterday's lunchable dressed with a lite ceaser dressing) topped with turkey and ham stars, strawberries (with candy eyes), fruit twist, yogurt topped with cherries and a cucumber chain.
You may have heard about "pink slime" in the news recently. Pink slime is boneless meat trimmings that have been treated with ammonia gas....Sounds delicious doesn't it? A recent report from The Daily, the Ipad newspaper from Newscorp. lists some stores that sell beef that includes pink slime and some stores that do not sell beef laced with pink slime. My point here is that this information reinforces for me the need to really pay attention to where I source my ingredients. I put so much effort into providing my family with the freshest and healthiest foods I can afford. I wish that our school systems would do the same, but they don't HAVE to. Day 175
Day 175. Yesterday I was snooping over at Welcome to the Jungle and saw that Amy had made a recipe that she had seen on Pinterest. I had also seen the recipe on Pinterest and had forgotten about it! So I got into my kitchen and made the chocolate/peanut butter crescent rolls.
So that is what D has for lunch today. 2 chocolate/peanut butter rolls, grape tomatoes and a little container of granola to put on her chobani champions orange/vanilla yogurt.

Day 89
For snack D has some banana bread. I used this recipe from King Arthur Flour. I reduced the sugar some and replaced one egg with chia gel.
For lunch D and A have some shredded marinated, grilled pork, tortellini salad and grape tomatoes.
I just kind of tossed a little bit of everything into the pasta salad. There is ham, salami, roasted red peppers, olives and peas in there with a little bit of light poppy seed dressing.

Day 74
Tiffany over at Cute Food For Kids posted a candy necklace tutorial yesterday and I just had to try it! So for snack today D has her candy necklace, but I did put it in with some Cracklin Oat Bran cereal to ease some of my guilt for sending her to school with candy. LOL
For lunch the girls had a spring vegetable mix (sugar snap peas, asparagus, carrots, onions and red peppers), tomato wedge, ham, homemade applesauce with vanilla goldfish crackers.

Day 71 and Easter
Today, we had a slow start getting back into the swing of things with Spring Break being over. I don't have pics of M's lunch or D's snack. D and A had some left overs for lunch today. Mashed potato, ham bunny, broccoli tree with purple carrot flowers, some green beans, grapes, orange and strawberry.
We had a great Easter here. It was a beautiful day. We enjoyed every minute of it!
I am embarassed to admit that this is my baby at 6:30 a.m. taking a bite out of her chocolate bunny. Great way to start the day! LOL After the girls checked out their Easter baskets we made breakfast then moved on to preparing dessert for after our dinner.
We decided to put a spin on the Push Pop Cupcake. We made push pop triffles.
I prepared a chocolate cake according to package instructions and baked it in a 9 x 13 dish. Once it was completely cooled I used one of the push pop containers as a cookie cutter and cut out as many as I needed. I made a dozen. Then I sliced each cut out crosswise into thirds.
I put sugar free chocolate pudding in a pastry bag and lite cool whip into my Tupperware decorator to make filling easier.
We started with a layer of cake, then pudding, then cool whip until the containers were full. The girls had a great time making them. I kept the push stick out until I served them so they would store in my fridge easier.

Day 54
D had the strawberries and pineapples from yesterday for snack today. M made her own lunch.
For lunch I gave D and A, hard boiled egg bunnies and pasta salad.
For the pasta salad I used high protien pasta, olives, marinated roasted red peppers, yellow bell peppers, green beans, some juice from the pepper jar, red wine vinegar, parmesean cheese and a little Garden Salad Seasoning.

Day 47
For snack today D has some Honey Wheat Cracker Sticks and a little tub of chocolate frosting left over from her birthday cake.
We had a bit of a feast for lunch today. We started with make your own "Italian Sub" kabobs. Ham/salami/turkey, fresh mozzarella, cherry tomatoes, pickles and olives. A granola bite and strawberries with pineapple for dessert! We needed to fuel up so we can get outside and enjoy the beautiful weather while it lasts!!

Day 28
Today everyone is having breakfast for lunch. I have been making my waffles with this recipe. They are nice and crisp on the outside and so light and fluffy on the inside. My girls love them too! And they are pink because we still have some beet puree to use up. I added 1/4 c puree to the recipe. M also has Al Fresco Sweet Apple chicken sausage, 2 heart shortbread cookies, carrots, cucumbers, broccoli and ranch dip. The round container is her syrup. D didn't eat her snack yesterday because they had a class party so she is bringing it back to school today.
D and A have pink waffles with strawberries and cream, same apple chicken sausages (breakfast link size) and a clementine.

Day 22
For lunch M has 2 hot dog rolls to make meatball subs (meatballs not pictured), cheese for topping, 2 mini chocolate chip muffins, clementines. D has 2 mini chocolate chip muffins and grapes for snack.
I only have D today so we are having a quick easy lunch.
Ham, muenster cheese, turkey and apple skewers, blanched green beans, ranch dip and grape tomatoes.
I used this recipe to make the chocolate chip muffins.
Ranch dip
5 oz greek yogurt
2 oz mayonnaise
1 T hot water
1/2 tsp Buttermilk Ranch Dressing mix (I use Penzey's)
Put dressing mix into the hot water and let it sit while you gather the rest of the ingredients. Combine all the ingredients....DONE!
