Snack today was strawberries and blueberries.
Lunch is egg salad in a multi grain pita, strawberries and blueberries and cucumber slices.
Egg Salad
4 Hard boiled eggs ( cooled and shell removed)
1 T finely minced onion
2T light mayo
salt and pepper to taste
I use the large hole side of my box grated to grate the eggs. Then mix in onions, mayo, salt and pepper until well combined.
