End of the school year!

Wow it has been crazy with all the end of year activities going on.  I have been so busy that I manage to get a pic of snack but don't manage to get back to it for lunch or to post.  I won't bore you with the pics...how many pics of fruit can you look at really??  LOL

This week is the last week of school for both my kids so once we get settled into our summer routine I'll get back to posting regularly!

Day 103

For snack today D has granola balls and blueberries.  We made the granola balls a little different this time.  I used sunbutter which is a bit more runny than peanutbutter or soy butter.  So to compensate for that I added a tablespoon of chia seeds and 1/3 cup wheat germ.

D is having a friend over for lunch today so we are sticking with tried and true.  Pb & J, grapes and blueberries.

Days 101 and 102

Day 101
For snack D has 2 granola balls and some grapes.
Lunch this day was marinated/grilled chicken and mushrooms, pea pods, applesauce and canteloupe butterflies.

Day 102
I was in a mad rush this morning and didn't get to photograph D's snack but she had yogurt covered pretzels.
Lunch is ham/salami/string cheese/alfalfa sprouts roll ups, cucumber spears, strawberries with canteloupe flowers and butterfly.

Days 99 & 100

Snack is sugar free chocolate pudding.
D had grapes and grilled cheese for lunch.

DAY 100!!!!  YAY!!  I can hardly believe it!

D had a field trip to meet our community helpers (Fire Station, Police Station and Highway Department) today so she did not need to bring a snack.

For lunch the girls have pocket sandwiches.  Salami for D and seafood salad for A.  They both have strawberries and cherries with some sugar free cool whip to dip them.

Day 98

D had no school today so no snack.  For lunch today the girls had pork wontons with sweet and sour dipping sauce.  A had cantelope and D had apples.  I made the wontons using this method.  I used 1 lb. ground pork, 2 green onions finely minced, maybe 1/2 tsp garlic powder, 1 tsp minced ginger and 1 Tbs soy sauce for the filling.  I used a measuring teaspoon to measure out the filling.  I made them yesterday so after I boiled them I drained them well and layered them in wax paper to keep in the fridge.  Today I just heated a little oil in a pan and lightly pan fried them to warm them through.

Day 97

D has granola balls for snack again today.  I made them a little different this time.  I replaced some of the chocolate chips with butterscotch chips and I pulsed them in the food processor for a few seconds to chop them up really good. D really really loved them.

Lunch today is ham, salami and alfalfa sprout roll ups, grapes, cherries and fresh mozarella balls.

Day 96

Snack today was strawberries and blueberries.

Lunch is egg salad in a multi grain pita, strawberries and blueberries and cucumber slices.

Egg Salad
4 Hard boiled eggs ( cooled and shell removed)
1 T finely minced onion
2T light mayo
salt and pepper to taste

I use the large hole side of my box grated to grate the eggs.  Then mix in onions, mayo, salt and pepper until well combined.

Day 95

D's snack today is blueberries, strawberries, cherries and a cheese stick.  She has been super hungry lately, but I was still very surprised that NOTHING came home!

Lunch is mac n' cheese, shredded chicken, strawberries, blueberries and peach.

Day 94

For snack today D had chocolate covered "spiders".

D had a friend over today so there are 3 lunches of pb & j sandwiches, strawberries, blueberries and peach slices.

Days 91, 92 & 93

I am working on a bit of a back log today because for some reason Blogger has not been letting me in! 

Day 91 snack was granola balls and a cheese stick.  Lunch was chicken salad in a multigrain pita with cucumber slices and grape tomatoes.

Day 92 snack was granola balls and 2 Andes candies.  Lunch is pasta salad and grilled steak with a cherry tomato.

and day 93 we have dried apple slices and Wheat thin cracker sticks for snack and lunch for D is a salami sandwich with  red and white carrot sticks and cherry tomatoes.  A has seafood salad.
