Days 178 & 179

Day 178 D has Macaroni and cheese ravioli with fresh tomatoes and cheese pearls, fruit salad.

Day 179 From the top left D has tomato/cheese salad, wheat thin crackers, strawberries, chicken parmesean meatloaf and some cucumbers.

Chicken Parmesean Meatloaf

1 lb ground chicken
1/2 c seasoned bread crumbs
1/2 c parmesean cheese (I used shredded but grated would be fine)
1 tsp Penzey's pizza seasoning (or 1 tsp italian seasoning and salt and pepper to taste)
1/4 of a small onion finely chopped
2 eggs
1 c marinara sauce
1 c shredded italian cheese blend

In a large bowl lightly beat the eggs,  add the bread crumbs, parmesean cheese, onion and seasonings.  Mix well to combine.  I then spread this around the outer edges of the bowl and put the ground chicken in the middle.  For me it just makes it easier to combine it all without a lot of mixing.  You don't want to work the chicken too much because it can become tough.  Once it is all combined put into a lightly greased loaf pan.  Top with sauce and bake in a preheated 350 oven for 45-50 minutes. Top it with the italian cheese blend and return it to the oven for another 10 minutes, until the cheese is melted.  Let sit out of the oven for 10 minutes or so before you cut into it.

Day 177

Vacation is over :( Time to get back to the real world!  We celebrated another birthday over vacation.  M turned 15.  I can hardly believe it.  Where does the time go?
Here is her birthday cake.  White cake with chocolate/mint frosting, Andes candies baking chips on the outside and a Wilton sugar sheet in zebra print.


177 Today D has a pepperoni roll with pizza sauce, her milk and a couple Newton fruit crisps and some fruit salad.

Today D requested the same lunch as yesterday so no need to take a pic.  Instead I'll share a picture of the cake we made for my husband's birthday today.  I think D loves the Jackson Pollack style!

Day 175

Day 175.  Yesterday I was snooping over at Welcome to the Jungle and saw that Amy had made a recipe that she had seen on Pinterest.  I had also seen the recipe on Pinterest and had forgotten about it!  So I got into my kitchen and made the chocolate/peanut butter crescent rolls.

So that is what D has for lunch today.  2 chocolate/peanut butter rolls, grape tomatoes and a little container of granola to put on her chobani champions orange/vanilla yogurt.

173 and 174

173 This is an awful picture and there really isn't anything to see.  Sunday night D asked me if she could have chicken soup for lunch on Monday.  Of course I didn't have any made!  When I got home from the gym at 6am I started a pot of soup.  Thank god for my freezer stash of chicken stock!  So in her thermos is chicken/barley soup, in the orange bag is dried fruit and nut trail mix and in the yellow container is grape tomatoes and pea pods.  She is lucky she is so stinkin' cute because when she came home from school her thermos was still over half full!  She hardly ate any of it! 



174 Valentine's Day!!  Another love inspired lunch!  First is vanilla yogurt with pastel heart sprinkles, Oreo Cakesters made with following the tutorial at Cute Food For Kids, freeze dried strawberries, pizza cut into hearts and fruit leather cut into hearts.

171 and 172

171 Spring is in the air...well atleast it was!  For yesterday's lunch D has ham/pineapple/peapod kabobs and a couple of red bell pepper heart flowers and a small container of trail mix.

172 Today's lunch is shredded roast chicken, peapods, grape tomatoes, yogurt and strawberries.  It is 50 degrees here today.  The sun is shining and it's absolutely beautiful.  Tomorrow we are expecting up to 4 inches of snow :(  I am soooo ready for Spring!

Today D has mozzarella cheese pearls, s/f banana pudding with hello kitty sprinkles, Just Fruit Munchies with a few chocolate chips, tortellini with sundried tomato pesto and a few carrots.

Days 168 and 169

I didn't get up to go to the gym yesterday morning and it threw my entire day off.  That is why I am posting yesterday's lunch today.  I got my act together and made it to the gym for 5 and was back to my routine!
168 So yesterday's lunch was left over pasta salad, mini hotdog hearts, yogurt with strawberries and a little container of ketchup.

169 Today she has a grilled steak sandwich, carrots, cheese stick and yogurt with strawberries.

Day 167

167, Nothing fancy today.  It's the end of the week and I'm trying to get things cleaned up for the weekend.  She has turkey/salami roll ups tied with strawberry fruit "rope", grape tomatoes, yogurt and blueberries.

We are a big sports family living in a big sports town.  Our home team made it to the Super Bowl this year and we are all eagerly anticipating the big game on Sunday.  Today of course is Spirit Day at school.  So here D is rocking her team spirit in her Tom Brady jersey and a Patriots logo on her face!

166 - Today D is using her fancy new Laptop Lunch Box.  Thanks again Whole Foods!!  She has Rainbows and Butterflies pasta salad, carrot chips, blueberries, 2 mini banana cream pies and strawberry fruit twist.

Day 165

Yesterday I was surfing the net looking at bentos when I came across Keeley McGuire's blog.  She totally inspired me to show D the love today <3.

D has cookie dough dip and honey wheat pretzels, chicken/apple sausage hearts, the cut outs from her mini pancakes, mini pancakes with creamcheese and strawberry jam and grape tomato hearts.
