With all of my spare time yesterday I made a pressed sandwich. Ciabatta bread loaf, pesto, salami and sliced mozzarella. So they all had some of the sandwich, some pesto pasta salad with sun dried tomatoes and artichokes and a couple of strawberries.
I have challenged myself to be more healthy and less wasteful. I am going to journal my efforts to feed my kids healthy, waste free lunches and snacks. I will have some winners and some losers but I'm putting it all here...the good, the bad and even the ugly!

Day 81
Nothing special today, a clementine and string cheese. Today is A's birthday so her mom and dad took the girls to lunch and over to Monkey Joe's for some play time!

Day 80
D had another parfait for snack today, and we didn't have A today so we were running errands and picked up lunch. Today's parfait is banana yogurt, shredded unsweetened coconut and mini chocolate chips.

Day 79
D has been loving the yogurt parfaits lately. I'm not sure if it's the parfaits or the container that she loves but whatever works! Today's is homemade vanilla yogurt with sliced peaches and graham cracker crumbs on top.
M has some left overs for lunch today. A couple nights ago we had beef stir fry with pasta and last night we had summer rolls. The container in the middle is peanut dipping sauce for the rolls.
The littles had macaroni and meatballs with garlic toast crowns. I used my lunch punch on the toast.

Day 78
For snack today D had another yogurt/strawberry parfait. I was running late and didn't have time to take a picture. For lunch both girls had Teddy Bear ham sandwiches, grapes, fresh mozzarella and black olive bear and Teddy Grahams.

Day 77
D and I made "cheesecake" strawberries yesterday, so for snack today she has 2 stuffed berries and some grapes.
Lunch is a chicken sandwich on Pepperidge Farms Goldfish bread. I used cheese and nori to decorate the sandwich. I made a fish out of fresh mozzarella, carrot and a black sesame seed.
When I made the filling for the strawberries I didn't really measure anything out so I'm just guessing at the amounts...but I'm sure the guesses are close enough.
1 (8 oz) package of cream cheese (I used low fat)
1/2 C greek yogurt
2 T Agave syrup
2 T confectioner's sugar
1 tsp vanilla
zest of 1/2 an orange
3 graham crackers (crumbled)
1 tsp unsweetened cocoa powder
Mix all ingredients (except cracker crumbs and cocoa powder) with a hand mixer until smooth. Refrigerate while you prepare the strawberries. I had very large strawberries so I cut the tops off and hollowed them out with a melon baller. I put the filling to a ziplock bag and cut the corner off. Squeeze the filling into the strawberries. On a small plate combine cracker crumbs and cocoa powder. Dip the filling end of the strawberries into the crumb mixture.

Day 76
Back to school!! Today M has beef sliders, pickles and muenster cheese. Her whole wheat slider rolls are packed seperately.
D's snack is a yogurt/strawberry parfait. I used homemade yogurt sweetened with Torani sugar free vanilla syrup.
D and A are having "fushi" (faux sushi). It is deli ham, plain greek yogurt, avacado, thinly sliced yellow carrot, thinly sliced cucumber and thinly sliced tomato. Strawberries and orange slices.
